We are growing lots of squash this year, from yellow and green zucchini varieties to patty pan. We are also get a surprise box every week from local farms of fresh organic produce. I feel like I’m on a vegetarian version of Chopped each week finding ways to use my mystery basket of ingredients! Lately, it has included lots of squash, so I needed to figure out what to do with all that squash. I let a couple sit on our vines a little too long and they got really big really fast! I still intend to use them and found out that they are a great addition to smoothies. I remember loving zucchini bread as a child and thought it was time to make some with our kids. I think it is a worthwhile investment to get one or two fun pans in a theme you can use throughout childhood. You can get them new or from a thrift shop. They transform the ordinary into the extraordinary. I busted out our castle pan when we made zucchini bread together and it gave it a magical quality that made our kids smile.

I also have a Recipes to Try board which is even bigger. As we try and like recipes, I move them over. They are all vegetarian, some sweet and others savory.
